Healthy Crock-pot Roast Recipe

I am not a huge fan of Turkey on thanksgiving, but I LOVE a good roast! This slow cooker roast is so easy to make and has so much nutrients in it. It is fork tender and I love serving over homemade mashed potatoes. See below for recipe :)

Ingredients:

  • 1 onion chopped

  • 4 to 5 garlic cloves minced

  • Chuck Roast I prefer grass fed when I am able to find it (however many pounds you want it)

  • A few gold potatoes cut in half. I usually do about 4 or 5

  • Organic carrots chopped

  • seasoning, I do salt, pepper, garlic powder and onion powder (You can add whatever seasoning you like)

  • Bone broth- I love the Kettle and Fire brand


Instructions

  1. Take a chuck roast and season generously on each side with salt and pepper and any other seasoning you like. I like adding thick flaky salt to mine.

  2. Sear the roast for added flavor on a cast iron skillet with some grass fed butter! Brown each side for a few minutes until you get your desired color.

  3. Place seared roast into crock pot with one onion cut up and a few carrots and potatoes. Season again with desired seasoning so the potatoes and carrots have flavor.

  4. Rub a few cloves of minced garlic directly onto the roast.

  5. Add bone broth. I usually do at least a cup or a little more. Truly up to you how much you want to add.

  6. cook on low for 8 to 10 hours

  7. Once it has slow cooked and is fork tender, it is ready to serve 😋

*I know some people like adding gravy packets or bouillon. I do not add this only because I like how it tastes without it. The world is your oyster though! Add whatever your heart desires :)

I love serving over mashed potatoes! If you want to make a gravy, you can take the bone broth and whisk in some flour to thicken it and make a gravy to go on top.
